Haiti - Penultimate Chapter

To get the measure of the man who is
Ernso Jean Louis
you need only to have taken a look around you, but there was much more to this
than first met the eye. Yes, among all the hardship and degradation there was the
super Guest House and a suite of Offices but outside of that lay a huge indicator!
En-route from Santo Domingo the capital of The Dominican Republic to
Port-au-Prince
the pilot drew our attentinon to the sudden and dramatic change to the
 vegetation below.
Almost devoid of any greenery at all the trees had all been felled years ago for charcole,
but returning to Ernso's his 50 or so acres we sill in tact!
What a bonus then when it came to Wildlifing.
He assured me of the safety aspect of the whole thing,
and woe betide he who crossed Ernso's guests!
Justice certainly wasn't give regards taking images of this pristine area but my
first encounter was with these 3
Little Hunters
and again who could point a finger at them wanting to fill their bellies?
Not only was it alive with mostly Birds but was also the path which led to the
 Rum Distillery
Outside of the large Security Gates worked one of the last
 CHARCOAL BURNERS
with his latest batch still smoldering.
 SUGARCANE
CROP ROTATION
Think it might be best here to mix the
Birds with the Booze!
the diurnal and endemic
ASHY-FACED OWL
Not surprisingly a Lone Tourist on the Day
but here was my guide to lead me.
BLACK-THROATED BLUE WARBLER
RAW MATERIALS
 HOODED WARBLER
the species that once won me an evening dinner all expences paid
(but that's quite another story)
BUTTERFLY (unknown)
 From here I know little
HISPANIOLA LIZARD CUCKOO
 or nothing of the process
COMMON GROUND DOVE
save to say there was seemingly lots of it
NORTHERN PARULA
in vats and other large containers
TROPICAL PARULA
They were not very forthcoming with giving a swig
as with hand on heart it can be told not a drop passed my lips
(not for the want of trying)
The closest to a taste was being allowed to dip my hand into the
Fermenting Liquor
With all that stashed in there, never mind
 Roll Out the Barrels
Thought this Gent was Tapeing Up my Carryout
 Bottleing
 Capsuals
 and
 PACKAGING
Without 'hick' so much as a snifter it was nonetheless a
 Most Enjoyable Morning
Thanks to One and All!
